Protein Pancakes for More Stable Energy

Ingredients
For about 4-6 pancakes
- 100g whole wheat flour
or 50g whole wheat flour + 50g almond flour for a softer texture - 1 tsp baking powder
- 150ml unsweetened almond milk
- 1 tbsp apple sauce
- 1 tbsp ground flaxseeds
- 1 tbsp almond or hazelnut powder
- 1 tsp vanilla extract optional
- 1 tbsp maple syrup or peanut butter
- 1 tbsp olive or coconut oil for cooking
Preparation
1. Mix dry ingredients
In a bowl, mix the flour, baking powder, ground flaxseeds, and almond or hazelnut powder.
2. Add liquids
Add the almond milk, apple sauce, vanilla extract, and maple syrup. Mix until you get a smooth and homogeneous batter.
3. Let rest
Let the batter rest for 5 to 10 minutes. This short waiting time results in softer pancakes and a more even texture.
4. Cook the pancakes
Heat a pan with a little oil. Pour a small ladle of batter, then cook for 2 to 3 minutes, until small bubbles appear on the surface.
Flip the pancake and continue cooking for 1 to 2 minutes.
