Fresh wraps: ready-to-go for work
A fresh, simple, grab-and-go lunch: that’s the idea. These wraps play on the contrast between crunchy vegetables, a light protein source, and a tangy sauce that prevents heaviness.
Quick to assemble and designed for a busy workday, they fit well into a routine where you want to stay focused without weighing down your digestion.
Ingredients
- 2 large tortillas (whole wheat or corn for a gluten-free option)
- 150g cooked, shredded chicken breast (or 200g roasted chickpeas for a vegetarian version)
- 1/2 avocado, sliced
- 1 carrot, grated or ribboned
- 1/2 cucumber, cut into sticks
- A handful of mixed greens or arugula
- 2 tablespoons plain yogurt (or plant-based yogurt) mixed with 1 teaspoon mustard, juice of half a lemon, salt, and pepper
- 1 tablespoon fresh herbs, chopped (parsley, cilantro, or chives)
- A drizzle of olive oil
Preparation
1. Prepare the protein base
If using chicken, slice it thinly after cooking. For a plant-based option, roast chickpeas for 15–20 minutes in the oven with a little oil, salt, and paprika.
2. Mix the sauce
In a small bowl, combine the yogurt with mustard, lemon juice, herbs, salt, and pepper. Adjust consistency with a spoonful of water if needed. This sauce keeps the filling fresh without making it heavy.
3. Assemble
Lay out the tortilla, arrange a bed of greens, add carrot, cucumber, avocado, and the chosen protein. Drizzle with olive oil, then a spoonful of sauce. Roll tightly, folding the edges inwards.
How to serve
- Cut in half diagonally for a clean, easy-to-eat presentation.
- Wrap in parchment paper to prevent sogginess and maintain its shape.
- Serve with fresh fruit and a small bottle of water or cold infused drink to stay focused in the afternoon.
- Can be eaten cold or lightly toasted on a hot griddle for 1–2 minutes for a softer texture.
Advance preparation
- Store components separately: tortillas and filling in the fridge for 2 days, sauce in a sealed small jar.
- Assemble in the morning or at your workplace to prevent the tortilla from getting too soft.
- To save time, cook several chicken fillets or roast chickpeas in a batch for 3–4 lunches.
Variations
- Mediterranean option: replace yogurt with tzatziki, add sun-dried tomatoes and feta (contains dairy).
- Asian version: sesame sauce (check for nuts depending on ingredients), pickled cabbage, and grilled tofu.
- Gluten-free: use large lettuce leaves or gluten-free tortillas.
- Vegan: replace yogurt with soy- or oat-based cream and choose plant-based proteins.
Why we love it
The contrasting textures—crunchy, creamy, tender—make each bite clean and satisfying. The roll format is designed for mobility: easy to transport, quick to eat, and simple to reassemble depending on the day.
The "Glow" Detail
A neatly rolled wrap offers a minimalist visual plate: soft green avocado slices, orange carrot ribbons, and dark greens. A diagonal cut reveals the layers, perfect for a crisp photo and elegant presentation in a lunchbox.
